1. Crispy Baked Brie Bites with Cranberry Compote

Inspired by the popular recipe from The Baker Mama, these brie bites are a delightful combination of creamy, crispy, and sweet. 

Ingredients:

  • 1 sheet puff pastry, thawed
  • 1/2 cup cranberry compote
  • 1/2 cup brie cheese, cut into small cubes
  • 1 egg, beaten

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Cut the puff pastry into 1-inch squares.
  3. Place a small amount of cranberry compote in the center of each square, followed by a brie cube.
  4. Brush the edges of the pastry with the beaten egg.
  5. Fold the pastry over to form a triangle and pinch the edges to seal.
  6. Place the bites on a baking sheet and bake for 12-15 minutes, or until golden brown.

Ingredients:

  • 1 baguette, sliced and toasted
  • 1 pint cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic glaze
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup burrata cheese

Instructions:

  1. In a bowl, combine tomatoes, red onion, basil, balsamic glaze, olive oil, salt, and pepper.
  2. Top toasted baguette slices with tomato mixture and a dollop of burrata.
